Appellation: Vigneti delle Dolomiti IGT

Tasting Notes: On the nose, Mediterranean herbs and freshly cut Alpine hay. On the palate,

Food Pairing: Grilled swordfish, scampi, mature cheeses.

Vineyard: The vines for this wine are organically farmed. The vineyard is located in Eppan, South Tyrol, between 900 and 1300 feet above sea level. The soils are loamy, calcareous and deep with a high amount of white dolomite rock.

Harvest: Gently handpicked.

Vinification: Spontaneous fermentation with one day maceration. Fermented in stainless steel for three and a half months, then four months in neutral wood barrels and another 4 months in stainless steel. 

ABV: 13.5% by Vol.    Serving temperature: 50 F° Acidity:  4.7 g/l
