Food Pairing: Definitely can be consumed on its own. Also pairs with light hors d’oeuvres, crudités, seafood and creamy cheeses.
Vineyard: The vines for this wine are organically farmed. The vineyard is located in Eppan, South Tyrol, between 900 and 1300 feet above sea level. The soils are loamy, calcareous and deep with a high amount of white dolomite rock.
Harvest: Gently handpicked between 27th of August and 4th of September 2019
Vinification: Spontaneous fermentation started in stainless steel after few days on the skins. Wine was bottled 2 weeks later. In mid-January, the process of hand riddling the bottle starts and the wines are disgorged at the end of February.
ABV: 12.5% by Vol. Serving temperature: 45-48 F° Acidity: 4.9 g/l
