Tasting Notes: A unique Langhe Nebbiolo. The nose is complex and fascinating with notes of dried roses, black cherry, blackberries and raisins. On the palate are balanced tannins, along flavors of wild black cherries and plums
Food Pairing: With red meat, meat with sauce, braised or fried beef and aged cheese.
Vineyard: Planted in 1945, soils are mostly clay. Vineyards lie at an elevation of 260m and have a south-east aspect. This wine is comprised of 15% ancient pre-phylloxera Gamay grapes in the vineyard that were saved. Biodynamically farmed.
Harvest: Hand picked.
Vinification: Fermentation on indigenous yeasts for 9 days with manual punching down and delastage. The wine is then transferred to stainless steel tanks, where malolactic fermentation and conservation during the winter with natural carbon dioxide will take place. Stabilization is done by opening the cellar windows and using the winter cold. In spring, when the temperature exceeds 20°C, it is bottled and after a minimum aging period of six months, is ready for market.
