Appellation: Langhe Nebbiolo DOC
Tasting Notes: A unique Langhe Nebbiolo. The nose is complex and fascinating with notes of dried roses, black cherry, blackberries and raisins. On the palate there are balanced tannins, along with flavors of wild black cherries and plums.
Food Pairing: With red meat, meat with sauce, braised beef and aged cheeses.
Vineyard: Planted in 1945, the vineyards lie at an elevation of 260m and have a south-east aspect, soils are mostly clay. This wine is comprised of 15% ancient pre-phylloxera Gamay grapes that were saved from the louse and still grow in the same vineyard. Biodynamically farmed.
Harvest: Hand picked.
Vinification: Fermentation on indigenous yeasts for 9 days with manual punching down and delestage. The wine is then transferred to stainless steel tanks, where malolactic fermentation and conservation during the winter with natural carbon dioxide will take place. Stabilization is done by opening the cellar windows and using the winter cold. In spring, when the temperature exceeds 20°C, it is bottled and after a minimum aging period of six months, the Risa is finally ready to drink!
