Radici e Filari ViV Metodo Ancestrale (Arneis + Nebbiolo)
Tasting Notes: On the nose there is citrus, orange blossom, lemon and ginger. On the palate, the wine is a moussy frizzante. It is creamy with a slight nuttiness.
Food Pairing: Super crushable! Definitely can be consumed on its own. Also pairs well with light hor d’oeuvres, crudités, seafood and creamy cheeses.
Vineyard: The ViV’s indigenous varietals Arneis and Nebbiolo are grown around the famous regions of Roero and Langhe. Biodynamically farmed.
Harvest: By hand.
Vinification: Very light press to extract the indigenous yeasts present on the grapes and subsequent fermentation in steel tanks. After the first spontaneous fermentation the wine rests on its lees till the first lunar cycle is complete. In October the wine is bottled by hand with a crown cap so that the wine can naturally ferment a second time in bottle and, thanks to the sugars and yeast present in the bottle, the “metodo ancestrale” cycle comes to an end without adding or subtracting anything before bottling. This pet nat is not filtered nor clarified and has no addition of sulfites before bottling. CO2 is the natural preservative and it is the byproduct of the fermentation in bottle. Each bottle is unique and follows its own evolution.
Curiosity: “Viv” in local Piedmontese dialect means “live”
