Esperides Grillo 2018

Appellation: Sicilia DOC

Tasting Notes: The color of this wine is pale yellow with green hues. On the nose there are intense notes of fresh ripe citrus fruits with white floral hints. The palate is very refreshing and balanced, with a present body, and long finish.

Food Pairing: Antipasti, vegetables, seafood based pasta dishes and fish.

Vineyard: This iconic varietal is grown close to the windy western cape of the island near the town of Alcamo, which is renown for its expressive and robust whites. Grown at 650 ft. above sea level with a guyot training system on vines that are on average 14 years old. The soils are a mix of clay and ancient oceanic minerals. The whole vineyard faces West, which limits in part the impact of strong oceanic winds. Yields are usually kept very low at about 500 gal per acre.

Harvest: The grapes are harvested exclusively by hand around the end of August.

Vinification: The grapes are destemmed and crushed and the juice macerates with the skins at low temperature for 12 hours. Fermentation happens in stainless steel for 2-3 weeks at 54-57 F°. The Grillo finally matures in stainless steel and bottle for 7 months. The result is a powerful yet very elegant and gracefully complex expression of this Sicilian indigenous grape.
