Varietal: 100% Pinot blanc

Appellation: Mitterberg IGT

Tasting Notes: Concentrated with an intriguing mix of sweet ripe fruit and bitter herbs. Round, fleshy start on the palate with a ripe grapey character and lots of concentration. Fresh lemon zest on the finish with a touch of flintiness.

Food Pairing: Quiche, Caesar salad, roast chicken, parmesan risotto

Vineyard: The vines for this wine are organically farmed. The vines are grown at 520 meters above sea level in Eppan Berg, in the mountainous region of South Tyrol, North Italy. Loamy and calcareous soil with high contents of white Dolomite rock.

Harvest: Gently handpicked. Half of every bunch of pinot blanc grape is removed even before the fruit begins to ripen so that the remaining grapes may grow better and in a more concentrated fashion.

Vinification: Native fermentation, using the vineyard-own yeast. 2 days on the skins and then the wine is aged for 22 months on the yeast (1/2 in stainless steel, 1/2 in neutral oak). Bottled unfined + unfiltered.
