Appellation: Sicilia DOC
Tasting Notes: This wine presents itself with a lovely deep garnet color with ruby hues. On the nose there are intense and elegant floral notes, immediately accompanied by hints of ripe blackberry, ripe plum and dark cherry. The palate is savory, balanced and lively tannic, full bodied. Overall an incredible blend of elegant grapes.
Food Pairings: Pasta with rich sauces, grilled meats, lentil stew and sheep’s milk cheeses.
Vineyard: The vineyard for this complex wine is located in Noto, on the southeastern leg of the island. The area is called contrada “Buonivini” which translated is literally “land of good wines”; its elevation is about 200 ft. above sea level. The vineyards are very close to the coast, therefore marine breezes constantly cool the growing area down during the hot Sicilian summers and allow the grapes to grow healthy without the need of any phytosanitary product.
No heavy machinery is ever used, everything is grown organically and with the utmost respect of the local flora/fauna. The vines, which are on average 10 years old, are head trained and yield a very small amount of extremely concentrated grapes (460 gal. per acre), the whole vineyard faces South-West.
Harvest: Exclusively by hand around the first half of September.
Vinification: The bunches are destemmed and the juice is macerated on the skins for one week with 2-3 gentle pump overs per day. The wine is matured in stainless steel tanks and bottle for a total of 14 months.
