Appellation: Sicilia DOC
Tasting Notes: This Nero D’Avola shows a deep ruby red color. On the nose it presents distinct red fruit notes accompanied by delicate floral scents. This wine is well balanced and refreshing.
Food Pairing: Red sauce based dishes, lasagne al ragu, black bean burgers.
Vineyard: The Nero D’Avola is cultivated by adopting fully organic practices in the Jato River Valley at an average altitude of about 1500 ft. above sea level. The vines are on average 16 years old and are planted on predominantly clay soil. The vineyard is placed on gentle slopes facing South/South west. The yields are low (600 gal per acre) to ensure concentration of flavor clusters.
Harvest: The grapes are picked exclusively by hand usually by mid-September.
Vinification: The grapes are destemmed, crushed and the juice is macerated with the skins for 7 days. Fermentation lasts 2-3 weeks at a constant temperature of around 75-79 F° in stainless steel, which is the usual natural temperature in the cellar. The wine is 100% matured in stainless steel for 12 months to maintain the unique varietal characteristics of Nero D’Avola.
The result is a very expressive terroir driven wine with approachable aromatics and refreshing character, easy to pair with many different Mediterranean inspired dishes and more!
