Appellation: Terre Siciliane IGT
Tasting Notes: The color of this wine is a beautiful pale yellow. On the nose there are delicate floral and citrus notes, with time in the glass this wine also presents very interesting tropical scents. On the palate this wine shows its freshness as well as a great balance with great acidity and elegant body, the finish is persistent and pleasurable.
Food Pairing: Vegetable dishes, antipasti, light fish + seafood dishes, pasta alle vognole. Honestly, also great as a porch pounder!
Vineyard: The Catarratto is cultivated organically in the Jato River Valley at an altitude of around 1640-1950 ft. above sea level. The vines are on average 20 years old and they’re planted on clay soils. The vineyards are beautifully located on a slope facing South. This varietal usually has very high yields and is often used for bulk wine, but the vigneron Sebastiano Di Bella is aware of it’s great potential and keeps the yields low at about 700 gal. per acre. The result is an incredibly aromatic and naturally refined product.
Harvest: All grapes are harvested by hand usually around mid-September.
Vinification: The bunches are destemmed and directly pressed with no skin contact. Fermentation starts with the selected yeasts coming from the surrounding vineyards and cellar and lasts about 2 weeks at a temperature of 57-61 F°. The Catarratto is then matured in 100% stainless steel vats for 6 months therefore enhancing the varietal’s freshness and highlighting the unique qualities that are representative of the area.
